Edge-on-up sharpness testers make the term »sharpness« scientifically measurable and comparable. For this purpose, a kind of »precision scale« measures the maximum pressure in grams required during a test cutting process to cut through a standardised medium (plastic wire). The lower the pressure needed to cut through, the sharper the edge. The required pressure can then be classified on a scale (BESS). A new razor blade, for example, has a BESS value of 50 g, while a kitchen knife that needs resharpening has a value of about 400 g.
BESS stands for »Brubacher Edge Sharpness Scale«, named after the manufacturer and inventor Mike Brubacher.
