This is a Japanese take on the Italian "mezzaluna" or half moon. Fitted with a heavy, arched blade it chops all types of herbs with a rocking cut. Tender stems and leaves are not squashed but cut to enhance the flavour.
Three-layer steel blade with a blue paper core 61 HRC, ground razor-sharp, surface left in forged condition with burned-in linseed oil (antirust). Every knife is signed by the master.
Magnolia wood handle with a buffalo horn ferrule, double bevelled.
Not rust proof.
